“At Fundamental.restaurant, we explore the landscapes around us. Polders, marches, forests and rivers. Next to landscape zones, there is another important factor for the area we live in. The ocean. The North Sea. One that forms both an enemy, as well as an ally. With sea levels rising, and salination of our soils plays a role in how we deal with our surroundings, we dive in to the sea. One of the first and most important plants we encounter there are algae. A classification on its own, they are claimed to have a wild variety of superpowers. Everything seems possible, from solving health issues to the answers for future food crises or energy. But, what do these mysterious and often times discarded plants do? How do they live? How do they taste, and how could they upgrade what we consider a 'local' ingredient in our kitchen?”

Set in a former grocery store from the 1900’s, in Rotterdam West, the space is transformed into the atelier space of Fundamental.restaurant. Here, experimentations with fermentations and preparations take place to uncover and explore the wide variety of flavours that our surrounding landscapes have to offer. During Exposition Diner Evenings, the atelier space doubles as a restaurant kitchen and chef’s table for a limited amount of guests who together will explore a set course menu revolving around changing themes.
